Chef Borja Susilla opened Tula in 2018, earning its Michelin star within a year of operation. The restaurant focuses on contemporary Spanish cuisine with particular attention to Valencian regional ingredients and techniques.
Susilla’s tasting menu demonstrates considerable skill and creativity. Signature dishes include Galician oysters with ponzu and Kalix caviar, charcoal-grilled lobster in lemon emulsion, and an elevated interpretation of Spanish paella featuring game and black truffles. Tosca (Michelin Guide)
Positioned near Arenal beach with terrace views across Jávea Bay and Cap Prim, Tosca restaurant offers French-Belgian-inspired Mediterranean cuisine. Since taking over in 2019, chefs Ferrán Ayora and Julien Buyle have developed a seasonal menu built around relationships with small local producers.
The kitchen specialises in Mediterranean fish and meat preparations, maintaining traditional foundations whilst incorporating contemporary techniques. The wine programme features over 100 selections, both regional and international, with knowledgeable sommelier guidance.

Volta i Volta (Michelin Guide)
Located in Javea’s Old Town near the central markets, Volta i Volta occupies a more intimate space whilst delivering sophisticated Mediterranean fusion cuisine. The kitchen team brings experience from various culinary traditions including Italian, French, and Japanese influences.
Their approach centres on locally sourced seasonal ingredients – meat, fish, vegetables, and rice – which form the foundation for dishes that blend traditional Mediterranean techniques with international influences. The wine list focuses exclusively on local Valencia and Jalon Valley producers.

La Perla de Jávea (Michellin Guide)
perating since 1984 on Arenal beach, La Perla de Jávea has maintained its reputation through nearly four decades of consistent service. The restaurant’s position offers views across the beach to Montgo mountain, providing an elegant backdrop for dining.
La Perla specialises in rice-based dishes, including fideuas, meloso rice, and paella preparations. The kitchen sources fish directly from Jávea port, selects meats from local farms, and uses rice from Spain’s premier growing regions. This attention to sourcing quality earned the restaurant a Repsol Sol and Michelin Guide recognition in 2023.
Even after almost four decades, La Perla de Jávea continues to be a local favourite.
